Kolache Pohe- My
Magic (flattened Rice / beaten rice dipped in tamarind pulp and coconut milk)
Today, I am giving
you the most yummy Maharashtrian snack dish. Do prepare and enjoy.
Recipe for -4
people
Ingredients:
½ kg.
thick poha (Flattened Rice), coconut-1 big, 2-3 green chillies, ½ cup tamarind,
½ cup jiggery, salt as per taste, ½ bunch of fresh coriander – finely chopped,
for tempering clarified butter- 2 tablespoon (Desi Ghee), ½ teaspoon cumin
seeds, a pinch of asafoetida, curry
leaves 7-8, 2-3 dry red chillies.
Method:
Scrap coconut and with
the mixer, take out the coconut milk by mixing water. Strain it and redo the
procedure so that you will get 6 cups of coconut milk. Mix jaggery in this milk
and keep ready. Soak tamarind in lukewarm water for ½ hour and take out the
pulp. It will be almost 1 cup. Grind the green chilies.
Rinse the flattened rice in water and strain it just
15 minutes before you plan to eat this dish.
Now add the grind chili, salt and
coriander in the strained poha and mix well.
For tempering, heat clarified
butter in a pan and put cumin seeds, asafetida, curry leaves and dry red chilies
in it. Add this tempering in Coconut milk.
Always serve this dish in a bowl.
Take poha in a bowl and add coconut milk and tamarind pulp as per your taste.
Don’t mix all the poha with
coconut milk and tamarind pulp at once, because, as the time passes, it becomes
thicker.
Enjoy a very simple, yet an absolutely
mouthwatering dish.
